Ingredients

  • Cupcakes:
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1½ teaspoons vanilla extract
  • ½ cup whole milk
  • Coffee Soak:
  • ½ cup strong brewed coffee or espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • Mascarpone Frosting:
  • 1 cup heavy whipping cream, cold
  • 8 oz mascarpone cheese, cold
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Topping:
  • Unsweetened cocoa powder, for dusting
  • Optional: dark chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well. Stir in the vanilla extract.
  5. Alternately add the dry ingredients and milk, beginning and ending with the dry ingredients. Mix just until combined.
  6. Divide batter evenly among liners, filling each about ⅔ full.
  7. Bake for 18–20 minutes, or until a toothpick inserted comes out clean. Cool completely.
  8. Mix the cooled coffee with the coffee liqueur (if using). Lightly brush or spoon the coffee soak over each cupcake.
  9. For the frosting, whip the heavy cream to soft peaks.
  10. In a separate bowl, gently mix mascarpone, powdered sugar, and vanilla until smooth. Fold in the whipped cream.
  11. Frost cupcakes generously using a piping bag or spatula.
  12. Dust with cocoa powder and garnish with chocolate shavings if desired.

Notes

  • Don’t over-soak the cupcakes—just enough coffee to flavor without making them soggy.
  • Keep mascarpone cold to prevent the frosting from becoming runny.
  • These cupcakes taste even better after chilling for 1–2 hours.
  • For an alcohol-free version, skip the liqueur and use vanilla-flavored coffee.
