Ingredients

  • Cake:
  • 2½ cups all-purpose flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • Pink food coloring (gel preferred)
  • Lemonade Frosting:
  • 1 cup unsalted butter, softened
  • 3½–4 cups powdered sugar
  • 3 tablespoons lemonade concentrate, thawed
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Optional Garnish:
  • Lemon slices
  • Pink sprinkles
  • Fresh berries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in lemon zest, lemon juice, and vanilla.
  5. Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix just until combined.
  6. Add pink food coloring a little at a time until desired color is reached.
  7. Divide batter evenly between pans and smooth tops.
  8. Bake for 28–32 minutes, or until a toothpick inserted comes out clean.
  9. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the frosting, beat butter until smooth. Gradually add powdered sugar, then mix in lemonade concentrate, lemon juice, and salt until fluffy.
  11. Frost the cooled cake layers, stack, and decorate as desired.

  • Gel food coloring gives vibrant color without thinning the batter.
  • Lemonade concentrate adds that true pink lemonade tang.
  • Chill the cake for 20 minutes before slicing for clean layers.
