1 lb sirloin or ribeye steak
-
1 tablespoon olive oil
-
½ teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon garlic powder
-
Pasta:
-
12 oz pasta (penne, fettuccine, or rigatoni)
-
Salted water, for boiling
-
Creamy Sauce:
-
2 tablespoons butter
-
3 cloves garlic, minced
-
1 cup heavy cream
-
½ cup beef broth
-
½ cup grated Parmesan cheese
-
½ teaspoon Italian seasoning
-
¼ teaspoon red pepper flakes (optional)
-
Optional Add-Ins:
-
Sautéed mushrooms
-
Baby spinach
-
Fresh parsley or basil
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve ½ cup pasta water, then drain.
- Season the steak with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear steak for 3–4 minutes per side (medium-rare to medium). Remove and let rest, then slice thinly.
- In the same skillet, reduce heat to medium and melt butter. Add garlic and sauté for 30 seconds until fragrant.
- Stir in heavy cream and beef broth. Simmer for 3–4 minutes until slightly thickened.
- Add Parmesan, Italian seasoning, and red pepper flakes. Stir until smooth.
- Add cooked pasta to the sauce, tossing to coat. Use reserved pasta water if needed to loosen the sauce.
- Gently fold in sliced steak and optional add-ins. Heat for 1–2 minutes.
- Garnish with fresh herbs and serve immediately.
Notes
- Let steak rest before slicing to keep it juicy.
- Ribeye gives the richest flavor; sirloin keeps it leaner.
- Add a splash of white wine before the cream for depth.
- Reheat gently to avoid overcooking the steak.
