Ingredients

  • Steak:
  • 1 lb sirloin or ribeye steak
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • Pasta:
  • 12 oz pasta (penne, fettuccine, or rigatoni)
  • Salted water, for boiling
  • Creamy Sauce:
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup beef broth
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Optional Add-Ins:
  • Sautéed mushrooms
  • Baby spinach
  • Fresh parsley or basil

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve ½ cup pasta water, then drain.
  2. Season the steak with salt, pepper, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high heat. Sear steak for 3–4 minutes per side (medium-rare to medium). Remove and let rest, then slice thinly.
  4. In the same skillet, reduce heat to medium and melt butter. Add garlic and sauté for 30 seconds until fragrant.
  5. Stir in heavy cream and beef broth. Simmer for 3–4 minutes until slightly thickened.
  6. Add Parmesan, Italian seasoning, and red pepper flakes. Stir until smooth.
  7. Add cooked pasta to the sauce, tossing to coat. Use reserved pasta water if needed to loosen the sauce.
  8. Gently fold in sliced steak and optional add-ins. Heat for 1–2 minutes.
  9. Garnish with fresh herbs and serve immediately.

Notes

  • Let steak rest before slicing to keep it juicy.
  • Ribeye gives the richest flavor; sirloin keeps it leaner.
  • Add a splash of white wine before the cream for depth.
  • Reheat gently to avoid overcooking the steak.
