Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add shrimp, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
- Cook shrimp for 2–3 minutes, just until pink. Stir in corn and bell pepper. Remove from heat.
- For the sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Slowly whisk in milk and cook until slightly thickened, about 2–3 minutes.
- Reduce heat to low and stir in sour cream, shredded cheese, garlic powder, and salt until smooth.
- Spoon shrimp mixture into tortillas, roll tightly, and place seam-side down in the baking dish.
- Pour sauce evenly over enchiladas and sprinkle with remaining cheese.
- Bake uncovered for 25 minutes, or until bubbly and lightly golden.
- Rest for 5 minutes, then garnish and serve.
