Ingredients

  • Shrimp Filling:
  • 1 lb raw shrimp, peeled, deveined, and chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • ½ cup corn kernels (optional)
  • ¼ cup diced red bell pepper
  • Creamy Enchilada Sauce:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1½ cups milk
  • ½ cup sour cream
  • 1 cup shredded Monterey Jack or Mexican-blend cheese
  • ½ teaspoon garlic powder
  • Salt, to taste
  • Assembly:
  • 6–8 flour tortillas
  • 1½ cups shredded cheese (cheddar, Monterey Jack, or blend)
  • Optional Toppings:
  • Fresh cilantro, chopped
  • Green onions
  • Avocado slices or guacamole
  • Lime wedges

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Add shrimp, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Cook shrimp for 2–3 minutes, just until pink. Stir in corn and bell pepper. Remove from heat.
  4. For the sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  5. Slowly whisk in milk and cook until slightly thickened, about 2–3 minutes.
  6. Reduce heat to low and stir in sour cream, shredded cheese, garlic powder, and salt until smooth.
  7. Spoon shrimp mixture into tortillas, roll tightly, and place seam-side down in the baking dish.
  8. Pour sauce evenly over enchiladas and sprinkle with remaining cheese.
  9. Bake uncovered for 25 minutes, or until bubbly and lightly golden.
  10. Rest for 5 minutes, then garnish and serve.
