Ingredients
To make this dish, you’ll need:
- 2 chicken breasts or thighs, diced
- 1 packet taco seasoning (or homemade)
- Corn or flour tortillas
- 2 ripe avocados
- 1 lime
- 1/2 red onion, finely chopped
- Fresh cilantro, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
Preparation
Start by preparing the chicken and guacamole. Dice the chicken into bite-sized pieces and marinate with taco seasoning. For the guacamole, halve and pit the avocados, then scoop the flesh into a bowl. Juice the lime and finely chop the red onion and cilantro.
Cooking the Chicken
Heat a skillet over medium-high heat and add a bit of oil. Add the seasoned chicken and cook until fully cooked and browned, about 7-10 minutes. Make sure the chicken is cooked through and no longer pink inside.
Making the Guacamole
In a bowl, mash the avocados with a fork until you reach your desired consistency. Add the lime juice, minced garlic, chopped red onion, and cilantro. Season with salt and pepper to taste, and mix well.
Assembling the Tacos
Warm the tortillas in a dry skillet or microwave until soft and pliable. Place a generous amount of cooked chicken on each tortilla, then top with a dollop of guacamole. Add any additional toppings you like, such as shredded lettuce, cheese, or salsa.
Presentation
Serve the chicken tacos with guacamole hot, garnished with extra cilantro and lime wedges on the side. Pair with a fresh salad, rice, or beans for a complete meal.
Health Benefits
Chicken is a lean source of protein, while avocados provide healthy fats and fiber. The fresh ingredients in the guacamole offer vitamins and minerals, making this dish both tasty and nutritious.
Variations
For a spicy kick, add some chopped jalapeños to the guacamole or sprinkle the chicken with chili powder. You can also try different toppings like pickled onions, radishes, or queso fresco.
Tips for Success
Ensure the chicken is cooked thoroughly by checking that it reaches an internal temperature of 165°F (74°C). Balance the flavors in the guacamole by tasting and adjusting the seasoning as needed.
