- 1/2 small onion, diced
- 28 oz canned whole tomatoes , (San Marzano recommended), hand crushed
- 6 leaves fresh basil, chopped (or 1 tsp. dried basil)
- 1/4 teaspoon crushed red pepper flakes
- Salt and pepper
- 2 1/2 - 3 cups dried rigatoni pasta
- Ricotta Mixture:
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 3 Tablespoons fresh parsley, chopped
