Ingredients
- For the Lasagna Roll Ups:
- 8 lasagna noodles (cooked according to package instructions)
- 2 cups cooked, shredded chicken (rotisserie chicken works well)
- 2 cups ricotta cheese
- 1 ½ cups shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp dried Italian seasoning
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
- For the Alfredo Sauce:
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1 ½ cups heavy cream
- 1 cup grated Parmesan cheese
- ¼ tsp ground nutmeg (optional)
- Salt and pepper (to taste)
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9x13-inch baking dish with cooking spray or olive oil.
2. Cook the Noodles:
- Cook the lasagna noodles according to the package instructions. Drain and lay them flat on parchment paper to cool.
3. Prepare the Filling:
- In a mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until everything is combined.
4. Make the Alfredo Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the heavy cream and bring to a gentle simmer.
- Gradually whisk in the Parmesan cheese, continuing to stir until the sauce thickens (about 3-4 minutes). Add nutmeg (if using), and season with salt and pepper to taste.
5. Assemble the Roll Ups:
- Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
- Spread a generous amount of the chicken and ricotta mixture evenly over each lasagna noodle.
