Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 250 grams mushrooms, sliced (button or cremini recommended)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Preparation of Chicken: Begin by seasoning the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Introduce the chicken to the skillet and sear until golden brown on both sides, ensuring the interior remains tender. This should take approximately 5-7 minutes per side. Once done, remove the chicken from the skillet and set aside.
- Sautéing Aromatics and Mushrooms: In the same skillet, melt the butter and add the finely diced onion. Sauté until the onion becomes translucent and fragrant. Add the minced garlic and cook for an additional minute. Then, introduce the sliced mushrooms to the skillet. Sauté until they release their moisture and attain a beautiful golden-brown hue.
- Creating the Sauce: Pour the chicken broth into the skillet, scraping up any browned bits from the bottom to infuse the sauce with deeper flavor. Allow the broth to simmer for a few minutes, reducing slightly. Lower the heat and stir in the heavy cream and Dijon mustard. Simmer gently, stirring occasionally, until the sauce thickens to a luxurious consistency.
- Combining Elements: Return the seared chicken breasts to the skillet, nestling them in the creamy mushroom sauce. Let them simmer together for a few minutes, allowing the flavors to meld harmoniously. Ensure the chicken is cooked through and the sauce has reached the desired thickness.
- Final Touches: Adjust seasoning with salt and pepper to taste. Garnish with freshly chopped parsley for a burst of color and freshness.
Serving Suggestions:
Serve this exquisite Chicken Mushroom Cream Sauce over a bed of al dente pasta, fluffy rice, or alongside roasted vegetables. The dish pairs wonderfully with a crisp white wine, enhancing the creaminess and balancing the earthiness of the mushrooms.
