Ingredients

  • For the Chicken Scampi:
  • 1 ½ pounds boneless, skinless chicken breasts, sliced thin

  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup low-sodium chicken broth
  • ¼ cup fresh lemon juice
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons butter

Instructions

1. Cook the Rice

  • In a saucepan, melt butter over medium heat.

4. Combine

  • Return chicken to the skillet and spoon sauce over the top.
  • Simmer for 2–3 minutes to absorb flavors.
  • Sprinkle with fresh parsley.

5. Serve

  • Spoon garlic Parmesan rice onto plates and top with chicken scampi and extra sauce.
