Chinese Chicken Fried Rice is not just a dish; it’s a celebration of flavors, textures, and culinary expertise. This dish perfectly encapsulates the essence of Chinese cuisine by combining simple ingredients into a harmonious and satisfying meal.
The Origins of Chinese Fried Rice
Fried rice is believed to have originated in China as a clever way to utilize leftover rice. Cooks would stir-fry the rice with various ingredients, creating a delicious and economical dish that could be enjoyed by everyone. Over time, this humble dish evolved to incorporate different proteins and vegetables, leading to the diverse fried rice variations we know today.
Ingredients You’ll Need
To prepare Chinese Chicken Fried Rice, you’ll need a handful of essential ingredients, including boneless chicken breast, cooked and cooled jasmine rice, vegetables like carrots, peas, and bell peppers, eggs, and a medley of sauces such as soy sauce and oyster sauce. These ingredients come together to create a balanced and flavorful dish.
Preparing the Chicken and Rice
Begin by marinating the chicken slices with a mixture of soy sauce, cornstarch, and a dash of sesame oil. This adds both flavor and tenderness to the chicken. Cook the marinated chicken until it’s no longer pink, then set it aside. Additionally, ensure that your cooked rice is cooled before using it in the dish to prevent it from becoming too sticky.
Stir-Frying: The Art of Quick Cooking
The key to a successful Chinese Chicken Fried Rice is quick and high-heat stir-frying. This technique not only cooks the ingredients rapidly but also imparts that coveted smoky flavor that defines this dish. Use a wok or a large skillet to achieve the best results.
Adding Flavors: Sauces and Seasonings
The sauces and seasonings you add to your fried rice play a crucial role in enhancing its taste. A mixture of soy sauce, oyster sauce, and a touch of hoisin sauce can bring out the umami flavors and provide that signature glossy finish.
Incorporating Vegetables for Color and Nutrition
Colorful vegetables not only add visual appeal to the dish but also contribute to its nutritional value. Sauté diced carrots, peas, bell peppers, and any other veggies you prefer. The combination of textures from the crunchy vegetables and tender chicken elevates the overall experience.
The Perfect Egg Scramble
Crack a couple of eggs into the wok and scramble them before adding the rice. This ensures that the egg is evenly distributed throughout the dish, coating the rice grains with a delicate layer of flavor and enhancing the overall texture.
Bringing It All Together: Combining Ingredients
Now comes the exciting part – combining all the elements. Add the cooked rice to the wok and gently mix it with the chicken, vegetables, and scrambled eggs. Keep the heat high and continue stirring to prevent the rice from sticking and to allow the flavors to meld together.
Tips for the Best Chinese Chicken Fried Rice
- Use day-old cooked rice for the best texture.
- Ensure all ingredients are prepped and ready before you start cooking.
- Don’t overcrowd the wok; stir-frying works best in small batches.

Marinate your sliced chicken with Chicken Marinate ingredients as listed above for 5 minutes. Set aside.
In a small bowl, pre-mix Sauce ingredients as listed above. Set aside.
In a hot wok set on medium high heat, add 1 teaspoon oil. Once oil is hot, fry chicken until fully cooked. Remove and set aside.
Add 1 teaspoon of oil and fry garlic and shallots for 10 seconds or until softened. Quickly add peas and carrots and fry for another 10 seconds or until softened. Push everything to the side of the wok.
Add 1 teaspoon of oil into empty space of wok. Pour in eggs and scramble before mixing with ingredients in wok.
Add remaining oil along with rice and toss with ingredients. Toss back in chicken.
Pour sauce around your rice along the edges of the wok (the heat + sauce creates more flavour vs. pouring on top of rice). Mix until all rice granules are coloured brown. Remove off heat. Serve and enjoy!
How much uncooked rice should I use?
This is 1 ½ measuring cups of UNCOOKED jasmine rice made the night before and refrigerated.
Can I cook my rice on a stovetop?
Yes! Follow these steps:
Rinse uncooked rice under cold water a few times until water is clear.
In a large saucepan, pour in your washed rice.
Next fill the saucepan with cold water. To know how much water to add, place your palm on top of the rice and as you fill the pot with water, stop when the water reaches your knuckles (where your fingers end).
Bring this to a boil and cover with a lid. Immediately reduce to the lowest heat possible and let this cook over low heat for 17-20 minutes until most of the water has evaporated and the rice is fluffy.
