Ingredients
- 12 oz pasta (spaghetti or penne)
- 2 boneless, skinless chicken breasts, halved lengthwise
- 1 cup Italian-style breadcrumbs
- ½ cup grated Parmesan cheese (plus extra for garnish)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 2 large eggs, beaten
- ½ cup all-purpose flour
- 2 tbsp olive oil
- 2 cups marinara sauce
- 1½ cups shredded mozzarella cheese
- Fresh basil or parsley, for garnish
Instructions
- Cook pasta in salted water until al dente; drain and set aside.
- Season chicken with salt and pepper. Dredge in flour, dip in eggs, then coat with breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Cook chicken 4–5 minutes per side until golden and cooked through.
- Add marinara to the skillet, nestle chicken in sauce, and simmer 5 minutes.
- Toss cooked pasta with sauce, top with chicken and mozzarella.
- Cover and cook until cheese is melted, or broil briefly for a bubbly top.
- Garnish and serve.
