Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil, divided
  • 8 oz mushrooms, finely chopped
  • 2 cloves garlic, minced
  • ½ cup shredded mozzarella or Swiss cheese
  • 2 tbsp cream cheese, softened
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • Optional: fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté mushrooms in 1 tbsp olive oil until browned; add garlic, thyme, salt, and pepper. Cool slightly.
  3. Mix mushrooms with cheeses.
  4. Cut a pocket into each chicken breast; stuff with mushroom mixture. Secure if needed.
  5. Sear chicken in remaining oil until golden. Transfer to oven and bake 20–25 minutes, until cooked through.
  6. Rest 5 minutes; garnish with parsley.
