Ingredients

  • 12 oz cheese tortellini (refrigerated or frozen)
  • 1½ pounds boneless, skinless chicken breasts, diced
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • Cowboy Butter Sauce:
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon Italian seasoning

Instructions

  1. Cook tortellini according to package directions. Drain and set aside.

  5. Stir in Dijon mustard, lemon juice, red pepper flakes, and Italian seasoning. Simmer 1–2 minutes.
  6. Return chicken to skillet and toss to coat in sauce.
  7. Add cooked tortellini and gently stir to combine.
  8. Sprinkle with parsley and Parmesan if using. Serve warm.

Notes

  • Add spinach or cherry tomatoes for extra color and nutrition.
  • For a creamier version, stir in ¼ cup heavy cream.
