Ingredients

  • 12 oz pasta (penne, fettuccine, or rigatoni)
  • 2 tablespoons olive oil
  • 1½ pounds boneless, skinless chicken breasts, sliced
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes (in oil), drained and chopped
  • ½ cup dry white wine (or chicken broth)
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • ½ teaspoon red pepper flakes (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook pasta according to package directions. Reserve ½ cup pasta water, then drain.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat. Cook chicken 5–7 minutes until golden and cooked through. Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds until fragrant. Add sun-dried tomatoes.
  5. Pour in white wine and simmer 2–3 minutes to reduce slightly.
  6. Stir in heavy cream and bring to a gentle simmer. Add Parmesan and stir until smooth.
  7. Add spinach and cook until wilted. Return chicken to skillet.
  8. Toss in cooked pasta, adding reserved pasta water as needed to loosen sauce.
  9. Garnish with herbs and serve warm.

Notes

  • Substitute half-and-half for a lighter sauce (it will be thinner).
  • Add mushrooms for extra depth.
