To embark on this flavorful journey, gather the following ingredients:

  • Boneless chicken breasts
  • Salt and pepper
  • Olive oil
  • Unsalted butter
  • Garlic cloves
  • Lemon juice and zest
  • Dijon mustard
  • Chicken broth
  • Fresh thyme (for garnish)

Preparing the Chicken

  1. Seasoning the Chicken: Begin by seasoning the boneless chicken breasts with a sprinkle of salt and pepper. This foundational step enhances the chicken’s inherent flavors.
  2. Searing the Chicken: In a skillet, heat a touch of olive oil over medium-high heat. Add the seasoned chicken breasts and sear them until they develop a gorgeous golden-brown exterior. Once seared, set the chicken aside.

Creating the Lemon Butter Dijon Sauce

  1. Sautéing Garlic and Creating the Base: In the same skillet, melt a pat of unsalted butter. Add minced garlic and sauté until aromatic. This forms the flavorful foundation of the sauce.
  2. Marrying Flavors with Lemon and Dijon: Pour in the vibrant lemon juice and zest, followed by the tangy Dijon mustard. Allow the ingredients to meld and create a harmonious symphony of flavors.
  3. Introducing Chicken Broth: Gradually incorporate chicken broth, stirring to combine. This addition elevates the sauce’s texture and amplifies its savory notes.

Cooking the Skillet Chicken

  1. Reuniting Chicken and Sauce: Gently return the seared chicken breasts to the skillet, nestling them into the luscious Lemon Butter Dijon sauce. Let them simmer gently, allowing the flavors to intertwine.
  2. Balancing and Reducing: Adjust the seasoning if needed, ensuring a perfect balance of flavors. Allow the sauce to reduce slightly, coating the chicken in its creamy tanginess.

Garnishing and Presentation

  1. Sprinkle of Fresh Thyme: To elevate the dish’s visual appeal and add a subtle herbal note, garnish with freshly chopped thyme leaves.

Tips for Flavor Variations

  • Herb Fusion: Experiment with different herbs like rosemary or tarragon to infuse additional layers of flavor into the sauce.
  • Creamy Indulgence: For an even richer version, consider adding a splash of heavy cream to the sauce.

Are you in the mood for a culinary masterpiece that marries the bright flavors of lemon, the richness of butter, and the tanginess of Dijon mustard? Look no further! In this article, we'll guide you through the delectable process of creating a Lemon Butter Dijon Skillet Chicken dish that's bound to awaken your taste buds. Let's dive into the delightful journey of crafting this savory delight.

Ingredients

  • 3 tablespoons olive oil
  • 1 1/2 to 1 3/4 pounds boneless skinless chicken breasts, pounded to an even thickness (4 average to good-sized breasts)
  • 1 to 2 teaspoons 21 Salute Seasoning (or poultry seasoning)
  • 1 teaspoon kosher salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • 1/2 cup white wine* or chicken broth, or as necessary
  • 1/4 to 1/3 cup Dijon mustard (use more if you want extra sauce)
  • 3 tablespoons unsalted butter
  • 3 to 4 tablespoons lemon juice
  • 1 to 2 tablespoons honey, optional and to taste
  • lemon slices, optional for garnishing
  • 2 teaspoons fresh parsley, optional for garnishing

Instructions

  1. To a large skillet, add the olive oil, pounded chicken, evenly season with 21 Salute, salt, pepper, and cook over medium-high heat for 5 minutes. Do not touch, move, or disturb the chicken while it is searing. After 5 minutes, flip chicken over. It should have a medium golden color. For thicker/bigger chicken breasts, sear for 6-7 minutes.
  2. Allow chicken to cook on the second side for about 5 minutes, or until done and cooked through. Again, do not disturb the chicken while it's searing.
  3. Remove chicken with a slotted spatula and place it on a plate to rest.
  4. Using caution, deglaze your skillet by adding wine (or broth) and allow the liquid to bubble up and steam violently for a few seconds.
  5. Add the Dijon mustard, butter, lemon juice, and allow the butter to melt, about 1 minute; stir continuously until melted and the sauce has combined.
  6. Turn the heat off, taste the sauce, and if you want it a bit sweeter, optionally add honey, to taste, and stir to combine.
  7. Add the chicken back into the skillet, flip it around in the lemon butter sauce, and spoon the sauce over the chicken.
  8. Optionally garnish with lemon slices, parsley, and serve immediately.

Notes

Wine: I recommend white wine because I think the flavor is better than with chicken broth, and I personally believe that the alcohol burns off, and what you're left with is the flavor imparted by the wine. However, use broth if that is a better option for your lifestyle or needs.

Storage: Chicken will keep airtight in the fridge for up to 5 days and in the freezer for up to 4 months.
