Ingredients

  • 4 salmon filets, skin removed
  • 2 tsp olive oil
  • 2.5 Tbsp Creole seasoning, divided
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp crushed red pepper, divided
  • 2 Tbsp butter
  • 1 shallot, diced
  • 4 cloves garlic, finely chopped
  • 1 tsp dried thyme
  • ⅓ cup sun dried tomatoes, sliced
  • ½ cup chicken broth
  • 1 cup heavy whipping cream
  • ¾ cup shredded parmesan cheese
  • ¼ cup fresh basil

Instructions

  1. Pat dry the salmon filets, brush them with olive oil, then season both sides with salt, pepper, 1 Tbsp Creole seasoning and ½ tsp crushed red pepper.
