Ingredients:

  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Zest and juice of 2 limes
  • Salt and black pepper to taste
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving

Instructions:

  1. Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will ensure a hot oven for roasting the cod.
  2. Prepare the Cod: Pat the cod fillets dry with a paper towel to remove any excess moisture. This will help the fish roast evenly.
  3. Create the Chili-Lime Marinade: In a small bowl, whisk together the olive oil, minced garlic, chili powder, paprika, lime zest, lime juice, salt, and black pepper. This mixture will be the flavorful marinade for the cod.
  4. Marinate the Cod: Place the cod fillets in a shallow dish or a resealable plastic bag. Pour the chili-lime marinade over the fillets, ensuring they are well coated. Let the cod marinate for about 15 minutes at room temperature. This allows the flavors to penetrate the fish.
  5. Roast the Cod: Transfer the marinated cod fillets to a baking dish lined with parchment paper. Roast in the preheated oven for 12-15 minutes or until the cod is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets, so keep an eye on them.
  6. Garnish and Serve: Once the cod is done, remove it from the oven. Garnish with fresh cilantro leaves and serve with lime wedges on the side. The vibrant colors and fresh flavors make this dish as visually appealing as it is delicious.
  7. Enjoy: Serve your Roasted Chili-Lime Cod hot and savor the explosion of flavors with each bite. It pairs wonderfully with rice, quinoa, or a simple side salad.

This Roasted Chili-Lime Cod recipe is a fantastic choice for a quick weeknight dinner or a special occasion meal. The balance of spicy and tangy flavors will leave your taste buds tingling and wanting more. Enjoy your culinary adventure with this delightful seafood dish!

If you're in the mood for a zesty and flavorful seafood dish, this Roasted Chili-Lime Cod recipe is just what you need. The combination of tangy lime and spicy chili perfectly complements the mild taste of cod. It's a quick and easy dish that will impress your taste buds.

Ingredients

  • 1 Teaspoon Paprika
  • 1 Teaspoon Dried Parsley
  • ½ Teaspoon Oregano
  • ½ Teaspoon Chili Powder
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Cumin
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Freshly Ground Black Pepper
  • 1/8 Teaspoon Cayenne Pepper
  • 2 Tablespoons Extra-Virgin Olive Oil, divided
  • 2 Cod Fillets
  • 1 Tablespoon Unsalted Butter, or use ghee for Paleo & Whole30
  • Zest and Juice of 2 Limes
  • Cooked Rice, Quinoa, or Cauliflower Rice, for serving
  • Your Favorite Vegetable, for serving

Instructions

  1. In a small bowl combine all of the spices and mix well. Using 1 tablespoon of olive oil, brush the cod filets and then rub the filets with the spice mixture. You will use the entire rub – so make sure to coat them very well. Refrigerate the cod filets for at least 30 minutes, or up to 12 hours.
  2. Preheat the oven to 450º. Place the cod filets on a foil-lined baking sheet and roast in the oven for 10-12 minutes – the fish will flake easily and be opaque throughout when it’s cooked through.
  3. Meanwhile in a small saucepot, melt the butter with the remaining tablespoon of olive oil. Add in the lime zest and juice and swirl the pan to mix. Serve the cod overtop of your chosen accompaniments and top with the lime butter.

Notes

  • This recipe is for 2 servings. If you want more you can adjust the spices as necessary - they are very easy to double. You can even double or quadruple the recipe and store any extra in an airtight container to have on hand. This rub will work on all kinds of fish or poultry - it's a good one to have in your pantry!
  • Make this recipe Paleo & Whole30 friendly by using ghee in place of the butter and serving over cauliflower rice!
